Turkish Style Quinoa Salad Recipe
Serving : 4 Servings
Ingredients
- 1 cup quinoa,
- 1 cup boiling water,
- 1 tbsp tomato paste,
- 3 tsps ground red pepper,
- 6-7 slices sun-dried tomatoes,
- 10 pickles,
- 3 tbsps of canned capers,
- 1 soup bowl chopped parsley,
- 1 soup bowl chopped dill,
- 3 tsps sumac,
- 2 tbsps of olive oil,
- Juice of 1/2 lemon,
- Salt to taste.
Preparation
- Pour quinoa in a strainer and wash under running water, rubbing,
- Transfer into a deep pan and add 1 cup of boiling water and salt, cook until tender,
- Put sun-dried tomatoes into hot water for 15 mins., drain and chop,
- Chop the pickles,
- Heat the olive oil in a pan,
- Add tomato paste, cook for 2-3 mins.,
- Add ground pepper, stir, remove from heat,
- Add cooked tomato paste and sumac into the quinoa and combine well,
- Add sun dried tomatoes, pickles, capers, parsley, dill and lemon juice and mix.
